One of my most popular recipes of all time is my Quick and Easy Cobbler. It stayed in my popular posts category for almost 6 months. That recipe is a staple in our family and based on your feedback...a staple in many of yours too.
So, when we went to dinner at my mom's house the other night and she served us another type of homemade cobbler, I was surprised. Why would she make another version? There is no way it could be as good as her original? There is no way it could be as easy? I was wrong. It was so delicious, it was so easy and it was just as good (maybe even a tad better) than her original. We've made it with both blackberries and peaches...you could use apples, pears, cherries, mixed berries...just mix and match away.
Shopping List
3 cups frozen blackberries (or peaches or canned apple pie filling, etc.)
1 cup all-purpose flour
1 cup sugar
1 egg
3/4 cup butter, melted
Preheat oven to 375 degrees.
Place frozen berries across the bottom of a greased (I use Pam) 8x8 inch baking dish. In a mixing bowl, combine flour, sugar and egg with a wooden spoon until crumbly. Sprinkle flour mixture down over your berries. Pour melted butter over everything. Bake about 40 minutes or until browned and bubbly.
That's it! So simple, right? And let me tell you...it was delicious! My mom also made it using canned peaches instead of frozen...this is seriously the most versatile little recipe. In fact, I bet you have all of the ingredients in your pantry right now. Go and bake you some cobbler!

ummm...yum!! we lived up near seattle for a few years and one thing i miss (of many!) is the berries!! blackberries grow wild everywhere!! we would just go out into the field behind our house and pick them! this cobbler will be like a walk down memory lane!

My husband loves cobbler of any kind! I usually just use a box of yellow cake mix for the topping, but this looks even better and with much simpler ingredients!
I LOOOOOOOVE cobbler! In fact, that's one of my most vivid memories from when my son was born. Let me explain (bc I'm sure you wanted me to). We lived in Nashville at the time, and had gone to the Farmers Market and bought a ton of fresh blackberries. I went home and made the best cobbler ever with them, and then went into labor. I kept thinking about that dang cobbler and how I didn't get to eat it! And then was in labor for 18+ hours and was starving! After he was born, and we were settled in our hospital room, I sent my mom home to get the tupperware of freaking cobbler and bring it to me!! So yes, I love me some cobbler. Almost as much as my first born. ;)
I totally want to make this with the apple pie filing I have in the pantry! So easy!

I'm so excited you shared this recipe! It brings back some great memories for me. My late "Papa" gave this recipe to my mom and I years ago and it was always so easy to remember because it's basically the fruit, a cup of everything else, and just a little less butter.
