And sometimes, I have moments of brilliance. (It's rare but it happens...) Two of my favorite recipes are my Slightly Sweet Sloppy Joes and my Pizza Joes. Both easy, family friendly, quick and perfect for busy weeknights. So...I decided to make a Taco Joe one night. It was spectacular! Simple, simple and yummy, yummy. Your family will be in love with this Joe.
Shopping List
1 pound ground beef (or turkey or chicken)
1 can Rotel tomatoes
1 can chili beans
1 can chopped green chiles
1 package taco seasoning
Burger Buns
2 cups Cheddar cheese, shredded
Chopped green onions to garnish
Preheat your oven to 425 degrees.
Over medium-high heat, brown your ground beef until crumbly. Stir in your Rotel, chili beans, green chiles, and taco seasoning. Reduce heat to low and simmer about 10 minutes.
On a foil lined baking sheet (for easy clean-up!), lay out 6 burger bun halves (so three buns total). Spoon your ground beef mixture on top of each half. Top each Joe with cheese.
Place baking sheet in the oven and bake about 10 minutes (or until the cheese looks nice and bubbly). Remove from oven and serve with chopped green onions down over the top.
So easy, right? This was one of those meals that I threw together in minutes on a busy school night. Yummy!
I used mild chili beans to make the Joes more kid friendly, but you use what your family likes. You could also use Mild Rotel but I used the Original Rotel (which is slightly spicier). No matter how you make it, you'll heart this Joe too.

Shay, I made the Taco Joes last night and my husband and I pigged out on 3 halves each...yikes! And still have leftovers for tonight! So easy and so, so good! Love your blog!

I don't do sloppy joes but these sound awesome baked in the oven! I hate buying hamburger buns since they always go bad (just 2 of us), but I could make this twice and use them up. Cool!
