Bundt Cake #36: Bananas Foster


This cake is my tribute to my husband's very favorite dessert...the Bananas Foster Cake at Eddie V's restaurant.  It's a moist yellow cake with this yummy Bananas Foster like glaze over the top.  It's so yummy...I'm never disappointed when hubs wants to go there for dinner.  Even if you don't like a traditional Bananas Foster...I think you will like this.  Just try it...you'll love it, I promise!

Shopping List
1/2 cup butter, softened and divided into slices
1 cup brown sugar
1 tablespoon rum extract
1 (or 2 maybe) bananas, sliced
1/2 chopped pecans, toasted
1 box of yellow cake mix
2 small boxes of instant vanilla pudding
1/2 cup of veggie oil
1 1/4 cups water
 4 eggs


Preheat oven to 350 degrees

Grease (I use Pam) a 10 inch bundt pan

In your prepared bundt pan, drop slices of butter all around bottom.  Put bundt pan in the hot oven for 4-5 minutes or until all butter is melted.  Remove pan from oven.  Crumble brown sugar over the melted butter in the hot pan.  Drizzle rum extract over butter/brown sugar mixture.  Place sliced bananas over brown sugar mixture.  Sprinkle pecans on top.  Set aside and prepare cake mix.
In mixing bowl, combine cake mix, puddings, oil, water and eggs with electric mixer.  Pour into prepared pan slowly on top of banana/brown sugar mixture and bake 40-45 minutes or until toothpick inserted comes out clean.

Let cake rest on counter in pan 10 minutes.  Then, invert the cake onto a serving plate.  Let the cake finish cooling. 


That's it!  It might sound kind of complicated but it's really very simple.  The brown sugar mixture makes this delicious glaze over the top of the cake...just fabulous!
