Dinner Tonight: Slow Cooker Potato Soup (super simple!)

My friend Cara over at Pearls and Handcuffs makes this ridiculously amazing and simple soup...in fact today, I'm not even going to show you my pics, I'm going to show you hers (it's that simple that I didn't even bother taking my own pictures!).  

I whip this up in my slow cooker all the time (and sometimes, I'll brown one pound of Owens sausage up first and put that in too...sausage always makes a good addition to potato soup!).   

Here are your ingredients...

Make this soup!  Like TODAY!  You will love it!

Shopping List
1 pound of ground sausage, browned (optional)
1 (30 oz) bag of frozen, shredded hash browns
3 (14 oz) cans of chicken broth
1 can cream of chicken soup
1 onion, chopped
A little salt and pepper
1 (8 oz) package of cream cheese (do not use fat-free because it won't melt!)
Shredded cheddar cheese and/or chopped green onions to garnish


In your slow cooker, add in your sausage (optional), hash browns, broth, soup, onion and a pinch of S&P.  Cook on low 6 to 8 hours or on high 3 to 4 hours.  About an hour before serving, add in your cream cheese, cover soup back up and keep heating.

Give the soup one big stir before ladling it into bowls and garnishing.

I made this yesterday morning and by the time we got home from church it was all ready! I have used shredded hashbrowns but I also LOVE it with the cubed frozen hashbrowns too! It makes it feel like real chunks of potato! :) Thanks for sharing your ideas this week for simple meals!!! LOVE them!!

Made this yesterday, it was a huge hit! So good! I did use the diced hash browns instead of shredded and used italian turkey sausage. Also used light (not fat free) cream cheese.
Turned out great! Thanks.

Love this soup!!! It is easy and delicious which makes it a win-win in my book! I add some Cajun spice to kick it up a notch but it is yummy either way. Love slow cooker recipes and love so many of the recipes you share! Thanks :)

It says to add the broth soup in the first step
When do you add the cream of chicken soup ? The recipe never says when

I just left out a comma. I have corrected it now. It says broth soup (just no comma).

So, my husband and I are now obsessed with this soup! We both died and went to Heaven.. As I was slurping every single last bite, an idea popped into my head! What about adding clam instead of the sausage for the PERFECT clam chowder???? It would seriously be to die for! I love the sausage in it too, but it could be a "mix and match" thing! :) Thanks for sharing all your wonderful recipes and meal plans! Makes this new Mommas life so much more structured!

Made this tonight and it was wonderful! My 2 1/2 year old ate every single bite, which is rare! I make about 3 of your recipe's a week and they have all been delicious and easy for this working mom. My husband and I were in your Sunday School class at church when we were engaged 8 years ago. We have since switched churches but I remember you and Andrew well. My family are HUGE K-State fans. Love your blogs. :)
