Dinner Tonight: Skillet Parm Pasta

It is a miracle I remembered to take a picture of this dish before we ate it.  The entire time I was cooking this meal, my 3 and 2 year olds were chasing each other around the kitchen with one of those stick toys with the horse heads on the end...you know what I'm talking about.  They thought it was hysterical to go round and round chasing each other...mama was plum worn out by the time dinner was on the table (in less than 20 minutes).  This dish hits all the bells and whistles of a chicken Parmesan but is waaaaaaay better for you (and much simpler to prepare).  I hope you have a more relaxing time preparing it :).

Shopping List
1 pound boneless, skinless chicken breasts, cut into bite sized pieces
1 pound pasta (any short cut)
1 onion, chopped
4 cloves garlic, chopped
1 can (14 oz) Fire Roasted Tomatoes (not Rotel...the can will say Fire Roasted Tomatoes)
3/4 teaspoon sugar
1 cup Parmesan cheese
1/2 cup Italian blend (or Mozzarella) cheese

Bring a large pot of water to a boil, drop pasta and cook to al dente (don't over-cook...the pasta will continue cooking a minute at the end in the tomato sauce).

In a skillet, brown chicken in 2 tablespoons of Extra Virgin Olive Oil 3-4 minutes each side (you don't have to cook all the way through because the chicken will continue cooking here in a minute...just get it brown).  Remove chicken and saute onion in chicken drippings 4-5 minutes.  Add in garlic, tomatoes and sugar.  Return chicken to pan and bring to a boil.  Cover pan, reduce heat to low and simmer 10 minutes. 

Toss pasta in tomato sauce, top with both cheeses, cover pan again 2 more minutes to give cheese time to melt.  Serve (in my case, exhausted!).


Ok...do you have a pasta bag at home?  This is mine.  So many times, we only need half a box or so of pasta (since we're cooking for two adults and 2 toddlers)...when this happens, I toss the remaining portion of uncooked pasta in a big Ziploc baggie.  After a few weeks, I have a random assortment of sizes and shaped pasta in my pasta bag.  This makes some pasta nights fun because we have "crazy pasta" as our base for dinner.  Plus, this alleviates wasting any unneeded pasta.  As you can see in my bag, I have penne, rigatoni, curly pasta and lasagna noodles...our skillet parm pasta was super crazy this night.

Hi Shay! I was thinking about making this with leftover rotisserie chicken. Any tips?

It would be delicious with a rotisserie chicken! No tips...just pull off the meat and substitute!
